BBQ Pork Tenderloin with Oven Roasted Potatoes

2 Tbl lemon juice 5290
1/4 cup vegetable oil 5291
1 tsp each, dried oregano, salt & pepper 5292
4-5 baking potatoes, peeled & cut into wedges 5293
1 large sweet potato, peeled & cut into wedges 5294
Preheat oven to 425° F [220° C]. Whisk together the oil, lemon juice and seasonings. Line a large baking sheet with parchment. Toss potato wedges in the oil mixture; place on baking sheet. Bake for 25 minutes. Place pork on baking sheet and bake as directed on package. Serve the pork tenderloin, sliced with the potatoes and a green salad or coleslaw.
Here’s an easy homemade version for coleslaw:
- Finely shred 1/2 head of cabbage.
- Stir in 1/4 cup (60 mL) mayonnaise.
- Add a handful of finely chopped sweet onion, celery & grated carrot.
- Chill until ready to serve.
If running late buy some potato wedges from your local supermarket deli on your way home.
