Ingrédients

  • 1 large onion, chopped 5814
  • 3 carrots, peeled & sliced 5815
  • 2 celery stalks, sliced 5816
  • 1 1/4 cups sliced mushrooms 5817
  • 1 green pepper, chopped 5818
  • 1 19oz / 540mL can diced tomatoes, un-drained 5819
  • 1 10oz / 284mL can condensed tomato soup 5820
  • 1 10oz / 284mL can beef consommé 5821
  • 2 cups water 5822
  • 1/2 cup barley 5823
  • 2 tbsp chopped fresh parsley 5824
  • 2 tbsp chopped fresh basil 5825
  • salt & pepper to taste 5826
Instructions
  1. Remove casings from sausages.
  2. Sauté sausage and onion in large saucepan over medium-high heat, breaking up meat with back of a spoon, for about 5 minutes or until no longer pink.
  3. Add carrots, celery, mushrooms and peppers. Cook 10 minutes.
  4. Add remaining ingredients. Cover and simmer 45 to 50 minutes or until barley is tender.

Tips


•A meal in itself. Add a crusty roll to complete it.

• This soup freezes well. Make a double batch to enjoy later.
