Cut your Jazz apple into 6 wedges.
Preheat a grill pan.
Cut manchego into triangles, similar in size to the apple wedges.
Lay your pancetta slices on a cutting board.
Place a Jazz apple wedge and a cheese wedge on top of each piece of pancetta.
Roll the pancetta around the Jazz apple and cheese and skewer with a rosemary sprig.
Add to the grill pan and season with salt and pepper.
Grill to crisp pancetta and melt the cheese, about 2-3 minutes per side.
